I love baked donuts! It’s a great evening snack or dessert, and of course when you feel it, these make a very fun breakfast too. I’ve always found it funny that donuts count as breakfast food when they’re basically a dessert in terms of ingredients and preparation. Okay for me! And while I love these decadent chocolate-baked donuts, these baked apple donuts with cinnamon sugar are a really tasty twist.
These are super soft, almost spongy with small pieces of apple cubes. I also love cinnamon and sugar topping on donuts. Call me crazy, but I love it when a bit sticks to your lips while you bite.
The batter for these baked apple donuts contains both applesauce and a fresh apple. You could bake these without the diced apple pieces if you don’t have one on hand, but I like the texture it gives these donuts.
The recipe below makes six baked donuts (here is the pan I used), maybe even seven if you happen to be using a very large apple. If your fresh apple is bigger, I would recommend using only half of it (just eat the rest!) So you don’t end up with an awkward amount of batter when making those baked apple donuts with cinnamon sugar.

In a medium to large bowl, whisk the dry ingredients together: flour, sugar, baking powder, cinnamon, and salt. In a smaller, separate bowl, mix the wet ingredients: milk, oil, vinegar and applesauce.

Mix the wet ingredients with the dry ingredients until there are no more lumps. Stir in the peeled and diced apple pieces. Butter or spray lightly on the donut pan before adding the batter.

Bake for 15-16 minutes at 350 ° F. Remove from the oven and let cool in the pan before tossing them onto a refrigerated shelf.

Mix in the cinnamon and sugar topping. While the baked donuts are still warm, dip the tops in the cinnamon and sugar mixture and brush well.
