That’s true. You understood me. I said, “Pina Colada snow cone. “ This is basically the perfect summer treat, and you can make it a virgin without sacrificing the tasty factor too! You don’t need a fancy snow cone machine either, just a blender powerful enough to crush ice and you’re good to go …
I put ice in a blender and just kept going until it was fine, “puffy” looking snow cone ice and scooped it into some snow cone cups. We also have this snow cone machine that is amazing to make several at a time for a party (and it comes with these reusable cups) but I use my blender when I only make one or two. For the perfect rounded top, I fill the bottom with loose ice, then stuff shaved ice into the rounded part of a lemon squeezer (you could use a ladle or one of these too) to get a rounded mound that I put on top. This machine is so cute too!
For the virgin version of this, you basically just add the syrup and leave out the rum, but it still is delicious With and without the sweet-fruity taste, it is also a children’s favorite. You can prepare the mixture in advance if you’re preparing it for a party, and it will be stored in the refrigerator in an airtight container for 2-3 days (just add another quick dip in the blender before using).
I love these bamboo poles to garnish, so don’t forget to add some flair to your snow cone with cherries and pineapple wedges (and maybe a tropical napkin, and you can use spoons or snow cone straws!). It doesn’t matter whether you’ve set up a complete snow cone cart or just a kitchen mixer, this summer treat will make every afternoon a little sweeter 😉 xo. Laura

Pina Colada snow cone
Pina Colada Mix

Cup
Coconut cream (Coco Lopez is a popular brand) -
3
tablespoon
fresh lime juice -
3/4
Cup
Pineapple juice
alcohol

Syringes
Light rum -
Syringes
dark rum

Mix your coconut, lime juice, and pineapple juice cream in a blender and blend on the highest level until it has blended.

Add ice to the blender and blend until it looks fine and puffy

Scoop ice into a glass or cone and fill it with the pina-colada mix

Add a dash of light and dark rum, if you like, or leave it as it would for a native option. Garnish with cherry and pineapple and serve immediately.

Store unused mixture in an airtight container in the refrigerator for 2-3 days.
