Confession: The real reason I had fried okra on my mind is because Trey and I stopped at a combo gas station / roast chicken for lunch on the drive home from Nashville (from a visit to Elsie) a few weeks ago.
I actually didn’t get fried chicken BUT I had some delicious fried okra pods and a pretty great cookie. Ha. So of course I realized I had to get my air fryer out and see if I could make air-fried okra pods asap!
I don’t pull out my air fryer every night, but whenever I do, I’m always happy. I absolutely LOVE air fries. They are seriously the best. And I’m happy to announce that while air-fried okra is a little more time-consuming to prepare (it’s still easy! It’s just more more time consuming than french fries), 100% worth it. So good!
The key is, you want to bread, air-fry the okra, then just throw in a tiny bit of oil, and then air-fry for a few more minutes. If you get lazy and don’t bother to fry the second time, they’re just breaded and still fried really well.
But friends, I tell you, just a few more minutes for a second deep fry and you will be so impressed with this air fried okra! And it still takes very little oil (so not too greasy like deep-fried okra pods) and I’m sure you could find and use gluten-free breadcrumbs if you wanted to go that route too.
These are delicious with a grilled sandwich, baked fish, or even on a salad (and they look really cute in a paper bag or holder to make you feel like you’re in a real restaurant).

Air fried okra
The best crispy air-fried okra recipe

okra
fresh -

egg -
1
teaspoon
water -
1
tablespoon
flour -

Breadcrumbs -
1
tablespoon
Olive oil or coconut oil

In a small bowl, whisk the egg and 1 teaspoon of water, set aside.

Rinse the okra pods and cut off the top and bottom. Cut into pieces about 1/4 inch thick. Turn the okra in the flour. Then dip each piece in the egg mixture, then in the breadcrumbs.

Air fry for 6 minutes at 356 ° F. Depending on the size of your air fryer, you will likely need to do this in two batches.

Add the breaded okra pods to the oil (if necessary, melt the coconut oil to a liquid). Then fry in the air for another 2-3 minutes.
You can swap out the flour and breadcrumbs for a gluten-free version if you wish.
