All the best to me! Yes, today is my 36th birthday. To celebrate, I made these birthday cake cookies.
You could probably think of these as Funfetti Birthday Cake Cookies as they taste like a classic birthday cake and have lots of sprinkles. lol Preparing is just as much fun as eating!
The key to this is a little chopped white chocolate chips in the batter. Something about it just makes these cookies more cake-like to me.

These birthday cake cookies are super easy and a great cookie to make ahead of time as the batter needs to chill in the fridge for an hour or up to overnight.
You can also bake some and freeze some of the dough to save for another festive occasion.
Birthdays are a bit different at the moment, but I’ve always felt that to be a January birthday. Snowy days or illness can always thwart plans at this time of year, and in recent years that has been an even greater possibility.

Funfetti sprinkles
Plus more for the tops

Beat soft butter and sugar until fluffy.

Stir in eggs and vanilla extract. Put aside.

In another bowl, whisk together the flour, salt, and baking powder.

Stir the dry ingredients into the wet until a dough forms.

Roughly chop the white chocolate chips, then stir into the batter along with ¼ cup of the sprinkles.

Refrigerate for at least an hour or up to overnight.

Place the dough on a baking sheet or baking mat lined with parchment paper. Roll the tops of each ball of dough in more sprinkles.

Bake at 350°F for 14-16 minutes. The bottoms of the cookies should start to brown.

Allow the cookies to cool before placing on a cooling rack or storing.
