Of course, there are a million different ways to make different types of tacos. But imagine the easiest corn tortillas topped with seasoned ground beef, onions, and some garlic. Plus, all the toppings – the most important part.
This easy taco soup is just that in soup form. I’m a soup fanatic so this has all the flavors of easy homemade tacos and the convenience of a soup.
As the name suggests, this taco soup is super easy to make. You can customize it in a number of ways, most notably through the items you serve on top.
I love making homemade tortilla strips for this recipe (worth the effort!), but you can swap those out for store-bought tortilla chips instead if you’d like. Aside from that, my toppings include shredded cheese, sour cream, avocado, cilantro, and a little hot sauce.
Taco soup is made with onions, garlic, ground beef, spices (see recipe card below), beans, diced tomatoes, and broth. It reminds me of a soupy version of chili.

To make homemade tortilla strips, simply sear corn tortillas in a little olive oil in a pan over medium/high heat until the edges start to brown. I use a pizza cutter to quickly and easily cut the corn tortillas into strips before frying.
I generally use store-bought taco seasoning. But if you want to make your own, here’s a recipe.

For the soup, start by chopping the onion and chopping the garlic.

In a large saucepan, heat a tablespoon of olive oil over medium-high heat.

Add the onion and cook until it starts to soften, 1-2 minutes.

Add the garlic and cook another minute.

Add the ground beef, breaking into small pieces with a wooden spoon while it cooks. Season with the taco seasoning.

Once the ground beef is cooked (no longer pink), add the drained can of beans and diced tomatoes into their juice. Also add the broth. Cook for 10 minutes until everything is warmed through.

stir in milk. Taste and add salt and pepper as needed.

While the soup is cooking, you can prepare the tortilla strips. To do this, cut the tortillas into strips (I use a pizza cutter for this) and fry them in a pan with a little olive oil until crispy.

Serve the soup with the tortilla strips and other taco toppings.
