I’ll be honest, sometimes I find pumpkin soup a bit boring. I love pumpkin, but I think it’s best when paired with other bold or spicy flavors. This pumpkin soup is anything but boring!
Ingredients:
- Pumpkin puree – canned (or make your own)
- bacon
- Sour apple
- Onion
- garlic
- rosemary
- cayenne
- nutmeg
directions:
Start cooking the bacon. Once done, set aside but continue cooking everything else in the bacon fat.
Then we chop the sour apple, onion and garlic. It doesn’t take long, but it’s probably the “longest” part of this whole recipe.
Next we add pumpkin puree, broth, spices and herbs. Finally, after mixing, we add the chopped bacon.
Crafting Tips:
- Fresh rosemary is delicious but can be overwhelming, so use it sparingly. You can always add more at the end after the tasting.
- Chicken or vegetable broth goes well in this soup. If you want to remove all animal products, you can omit the bacon (add some oil to cook the veggies in it) and swap out the heavy cream for a non-dairy alternative. The finished soup will be a little different, but still super tasty.
- This pumpkin soup makes great leftovers! Store in an airtight container for up to 3-5 days and reheat for a quick lunch.

In a medium to large saucepan, sauté the bacon.

When done, remove the bacon and set aside. Continue cooking in the same pot with the bacon fat.
