Roasted sweet potatoes are a tasty and healthy side dish that you can easily make in about 30 minutes.
I love it alongside steak or chicken, but you can also top these roasted sweet potatoes with a fried egg or a breakfast or vegetarian meal.
Sweet potatoes are just amazing. They’re a great source of vitamins A and C, as well as fiber. Plus, they’re naturally cute – so even my little son likes them.

- You can use other cooking oils like coconut oil or even butter if you prefer.
- Herbs that go well with sweet potatoes include: rosemary, cilantro, parsley, and thyme.
- If you want to add some heat to balance the sweetness of this recipe, try red pepper flakes or cayenne pepper.

Is It Best To Boil Sweet Potatoes Before Roasting?
No, sweet potatoes do not need to be boiled before frying.
Why aren’t my sweet potatoes crispy?
Be careful not to overfill the baking sheet. If the sweet potato chunks don’t fit into one layer (so they’re all touching the pan), use a second baking sheet.
