Chili con carne is one of my favorite. I learned how to make this recipe during my trip to Vancouver with Katimavik in 1984. Having a low budget at the time. We had to cook for 12 persons, black beans and tomatoes was a low cost way to fill our belly. Of course today I add some more ingredients combine with a good fresh Mexican beer to pimp the recipe. Like everybody, we have our own best chili con carne recipe, I believe this one is simple and fun to do, and for sure very good to eat. Impress your friend with the torch flame.

Classic Chili Con Carne with Mexican Cerveza

Ingredients
- lb lean (at least 80% ground pork)
- 1 large onion (chopped (1 cup))
- 6 cloves garlic (crushed)
- 1 tablespoon chili powder
- ½ teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano leaves
- 1 tbsp of smoked Paprika
- 1 teaspoon unsweetened baking cocoa
- 1 red pepper (chopped)
- 1 can diced tomatoes (from 28-oz can, undrained)
- 1 can (19 oz red kidney beans, strainer and rinse)
- I bottle Mexican beer (optional any beer will work)
- Grate some old cheddar
- Melts nicely the cheese under the torch
- For garnish : sour cream and fresh coriander
- In 3-quart cooking pot, cook pork, onion and garlic over medium-high heat about 8 minutes, stirring occasionally, until pork is brown.
- Stir in remaining ingredients add beans. Heat to boiling. Reduce heat to low; and simmer 35 to 45 minutes, stirring occasionally, until desired thickness.
